Around Bloor and Bathurst you've got student pubs and old-guard spots; Bellis is the grown-up option, closer in spirit to a King West cocktail room than anything else on the block. Still new, still under the radar, which is exactly when to go.

561 Bloor St W in the Annex, steps east of Bathurst station on the north side, between Insomnia and Big Way Hot Pot. It doubles as the lobby restaurant of the Nomas Hotel, so look for the boutique-hotel frontage rather than a bar sign. Transit could not be easier: Bathurst station is right there.
A lobby-bar-scale room that flips personality at 5pm: cafe brightness gives way to low light and a moody, sophisticated lounge feel. Seating runs bar and table, built around eating and drinking rather than standing and shouting. Sound stays at conversation level, in keeping with the listening-bar inspiration behind the drinks program.
A mixed grown-up crowd: Annex locals on dates, food-curious people chasing the Japanese-Italian menu, and hotel guests drifting down from upstairs. Mostly late 20s through 40s. It's quiet-cool rather than scene-y, at least for now while it's new.
The kitchen crossover actually lands. The Bellis rigatoni runs vodka sauce with hatcho miso, and the toma-toast puts ginger-soy marinated tomatoes on yuzu-whipped ricotta. Cocktails follow the food. A dirty dashi martini with dashi olive brine and a caprese fizz built on tomato and basil, drinks you won't find elsewhere on Bloor. Real pedigree behind it.
